Springfield Wild Yeast Chardonnay 2021, Robertson, South Africa

Minerals and ripe peach on the nose; a rich complex palate with bready leesy notes, lemon, orange peel, lightly honeyed mango fruit, and a strong mineral element. Delicious individual wine.
€30 from Fallon & Byrne, D2; The Corkscrew, D2; Redmonds, D6; Barnhill Stores, Glenageary; Jus de Vine, Portmarnock.
Springfield has been one of my favourite South African producers for many years. Based in Robertson, the Bruwer family make a range of distinctive wines, both red and white. They are possibly best-known for their two Sauvignon Blancs, Life from Stone and Special Cuvée, but I have always been a big fan of the above wine, and their red wines too.
As the name suggests, this wine is made using wild yeasts. It is fermented and aged in underground cement tanks for a prolonged period of 6-9 months. It is completely unwooded. What you get is a complex rich Chardonnay, with wonderful natural acidity and real character.
